Screen Sharing is buried under

/System/Library/CoreServices/Applications

but Spotlight Search (command-space) will find it

or it can be invoked from command line in Terminal with

open vnc://fqmachineaddress

or Go menu -> Connect to Server... and entering for the Server Address:

vnc://fqmachineaddress


Of course you'll need to do the VPN from off-campus and set things for specific users in Sharing > Remote Management.

As far as I know the specific users have to be local users not remote ... I'd probably create a local just for Screen Sharing and leave their login as remote.
As far as I know one has to set a separate password for Windows users to connect to the Mac still.

I always have the discussion whether they just need their files not the GUI since their files should be stored on the file server.
