You probably need to enable root, copy a plist from one account to the
other until you hit the one that got corrupted. Chown the plist.

Maybe ~/Library/com.apple.systempreferences.plist but more likely
~/Library/Preferences/ByHost/com.apple.preference.displays.HOSTID.plist

Just deleting the file may make the system recreate it but it's hard
to remove something that may be currently in use.
